I could do with a little help with Zelda, I'm stuck just after the Zora domain…

OK, stuck isn't quite the right word, I could go and do a dozen other things, with I want to do this.
I'm fighting a massive centaur thing up on the hill above the Zora castle. I have the metal armour which I've had the great fairy power up. I have food to boost me to 12 hearts and to boost my attack and defence. I have the glowy blue guardian sword and shield. Still I get killed withing about thirty seconds having done basically no damage to him.
My question is, am I missing some vulnerability? I feel like I could go and power up and still get my ass kicked, so I must be missing something. I can shoot him in the face and he stumbles, then I can hit him once or twice, but that's the best I've got.
I don't want to go and google for a solution for fear of unrelated spoilers. Any advice?
Spoiler - click to showThis isn't the quest for the Shock Arrows? If so, you don't have to actually fight there. But if you want to, those Centaurs are pretty much the toughest creatures in the game so dpn't feel too bad, but with a good weapon I found the best way is to master the dodge that puts things into slow motion (if it's a sword wielding one anyway) and shooting it in the face should stagger it as you said, and you should be able get on his back when that happens if you're fast enough (someone correct if I'm wrong, but you can definitely mount them some way).

Spoiler - click to showStasis is good for the centaurs too, I seem to recall. You get a precious few seconds to aim your arrows at their head, run behind them etc.
I’m pretty sure you’re supposed to avoid that thing the first time you meet it. The game even shows you hiding behind a rock, it’s more of a stealth section than anything.

Yeah. The fact that there were Stealth Shrooms everywhere should have been a clue.
